Lemon Hemp Seed Muffins

I love it when the citrus trees start to bloom in Florida. Here is a recipe for lemon hemp seed vegan muffins made from fresh-picked local lemons. These were delicious with morning coffee!


Ingredients:

Muffin Mix
  • 2 cups of whole wheat flour
  • 1 tsp baking powder
  • 1 tsp sea salt
  • 1 cup coconut sugar
  • 1 cup almond milk
  • 1/2 tsp arrowroot powder
  • 1/4 cup olive oil
  • 1 tbsp vanilla
  • 3 tbsp fresh squeezed lemon juice
  • 3 tsp hemp seeds
Glaze
  • 3 tbsp fresh lemon juice
  • 1/2 tsp lemon zest
  • 1/2 cup organic powdered sugar (insures vegan)
  • Extra hemp seeds for sprinkles


1. Mix the dry ingredients and the wet ingredients separately
2. Combine them to make the muffin batter
3. Use coconut oil to grease the muffin stone or tin
4. Bake for 20 minutes at 350 degrees (25 if using a baking stone)


5. Mix the ingredients together for the glaze


6. Dip the cooled muffins into the glaze then sprinkle with extra hemp seeds
7. ENJOY!
