Island Style Portobello Tacos

This is a super easy and delicious taco recipe, that also happens to be vegan!


Portobello Marinade
  • 1 Landshark or other island style lager
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • Juice from one lime

2-3 large portobello mushrooms (sliced)

Taco Garnishes
  • Black bean and corn salsa (recipe HERE)
  • (can sub with a jar of favorite salsa mixed with one can of corn and one can of black beans both drained and rinsed)
  • Corn tortillas

  • Avocado
  • Sliced Lettuce and Spinach
  • Hemp Seeds
  • Black Olives
  • Lime Wedges


1. Mix your marinade and slice your portobellos
2. Let the mushrooms sit in the marinade for 2-3 hours (turning every hour)
3. Heat a skillet to medium heat and cook the mushroom in the marinade until they are tender (about 8-10 minutes)
4. Drain the juice and build your tacos!
