Whole Wheat and Cinnamon Harvest Muffins

We made these for All Hallows' Eve (Gaelic Samhain tradition). The kiddos loved them, and you can use family favorite grains with the whole wheat (oats, rye, barley... whatever you'd like).

  • 1 1/2 cups whole wheat flour
  • 1/4 cup grains of your choice (or you may simply use additional flour)
  • 4 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg or pumpkin spice
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 2 eggs
  • 1 cup milk
  • 1/2 cup melted butter

coconut oil to grease baking stone

  • Mix dry ingredients (flour, grains, salt, baking powder, cinnamon, spice)
  • Mix wet ingredients (eggs, milk, butter, sugar)
  • Combine together and stir gently
  • Coat your muffin stone or baking pan with coconut oil
  • Fill each cup 3/4 full
  • Sprinkle the tops with cinnamon sugar mixture
  • Bake for 15 minutes at 375 (or until done)
