Baked Maori Kai

Here is my twist on the Maori Boil Up... it's a Maori Bake Up! Easy and delicious...


  • 1-2 lbs pork steaks, chops, or sliced brisket
  • 4 oz watercress
  • 2 cups chopped tomato
  • 3-4 kumara cubed (sweet potatoes)
  • 2 cups broth (meat, bone, veggie anything you'd like)

  • virgin coconut oil
  • salt
  • pepper
  • ground ginger
  • tumeric
  • onion powder

Doughboy Ingredients:
  • 1 cup flour
  • 1 tsp cane sugar
  • 2 tsp aluminum free baking powder
  • 1/2 tsp salt
  • 1 tablespoon butter
  • 1 cup milk


1. Preheat oven to 375 degrees
2. Coat large casserole dish with coconut oil
3. Place 2oz of watercress layered in the dish
4. Add the chopped tomato
5. Place the pork on top (sprinkle with salt and pepper)

6. Add a layer of the other 2oz of watercress
7. Pour the broth into the casserole dish
8. Add the cubed kumara
9. Sprinkle with salt, tumeric, ginger, and onion powder

10. Bake at 375 for 35 minutes
11. Prepare the dough boys (mix dry ingredients first)
12. Add the butter and then fold in the milk

13. Shape your doughboys into biscuits

14. After you have baked your dish for 35 minutes, place your dough boys on top of the kumara and bake for another 15 minutes

15. Serve hot with melon
