Crispy Kale and Butter Spaghetti Squash

This meal was a huge hit -- toddler and husband both licked their plates clean!


Ingredients
  • kale bunch
  • shredded cheese
  • spaghetti squash
  • olive oil
  • sea salt
  • pepper
  • dried basil
  • one onion
  • two cloves minced garlic
  • eight tablespoons of butter

Directions:

1. Wash and pat kale dry
2. Remove stems from kale and arrange on a baking stone or greased baking sheet
3. Sprinkle kale with shredded cheese and sea salt


4. Bake kale for 15 minutes at 350 degrees until crispy


5. After it cools, pull apart into chips


6. Wash and cut spaghetti squash in half (long way)
7. Scoop out the seeds and drizzle with olive oil, sea salt, pepper, and dried basil


8. Bake face down for 40 minutes at 375 degrees


9. Meanwhile, chop onions and garlic and sauté with two tablespoons of butter until cooked
10. Melt in other six tablespoons of butter


11. Scoop out baked squash and combine with butter mixture


12. Toss and serve with kale chips
