Zebba Zabba Potato Omelette Bake

I took into consideration, my husband's and toddler's suggestions for naming this dish. This was one of those "on the spot" meals that turned out to be delicious! I present the Zebba Zabba Potato Omelet Bake.



Ingredients:

(This serving size will make enough for four people with no leftovers)

  • 2 potatoes washed and cut into small cubes
  • 1/2 onion (or sub with garlic and onion powder)
  • 6 eggs
  • 3 tablespoons of goat cheese (can substitute with cream cheese)
  • 1 cup frozen corn
  • 1 cup shredded cheese
  • 1 avocado
  • salsa
  • olive oil
  • sea salt

Directions:

1. Coat glass casserole dish with olive oil
2. Layer potatoes and onions in dish
3. Drizzle with olive oil and sprinkle with salt and pepper
4. Bake at 375 degrees for 10 minutes


5. Mix eggs, goat cheese, frozen corn in a bowl


6. Once potatoes have baked for 10 minutes remove them and cover with egg mixture
7. Bake for another 15 minutes



8. Once baking is finished remove from oven and sprinkle with shredded cheese
9. Serve in squares topped with avocado, salsa, and sea salt
