Whole Wheat Veggie Flatbread

This is a healthy (and easy) way to serve "pizza" to the family!


You can get as creative as you'd like with toppings, but here is the basic recipe to get you started.

Ingredients:

Crust

  • 2 1/2 cups whole wheat flour
  • 3 teaspoons aluminum free baking powder
  • 3/4 cup water
  • 1 tablespoon olive oil
  • 1 1/2 teaspoon salt


Topping

  • 6 oz tomato paste
  • 1-2 cups shredded cheese
  • 1 caramelized onion
  • 1 sliced bell pepper
  • 1 cup frozen broccoli florets


Directions:

1. Caramelize your onion (if you have never done this, learn how to HERE)


2. To make your crust combine the oil and water

3. In a separate large bowl, combine the whole wheat flour, salt, baking powder

4. Slowly stir in the water mixture to the dry ingredients to make a dough (if the dough is too sticky add more flour / too hard add 1 tablespoon of water at a time)

5. Knead your dough for about 3 minutes and roll out with a rolling pin


6. Roll your dough into a large rectangle and transfer to your baking stone (or greased and floured baking pan)

7. Layer the tomato paste on the dough



8. Add a layer of cheese, then onions, sliced pepper, and broccoli


9. Add another layer of cheese and a sprinkle of salt and pepper

10. Bake for 20 minutes at 350 degrees

11. Cool, slice, and ENJOY!
