Strawberry Swiss Chard Cobbler

This is a spin on rhubarb pie... but with swiss chard! Swiss chard is easily one of the healthiest vegetables around, but it doesn't thicken the same as rhubarb.

So, instead of pie, we made cobbler! It was delicious (and quite simple).


Fruit Mixture
  • 1 pint of fresh strawberries (washed and sliced)
  • 1 bunch (about 3/4 cup) ruby or rainbow swiss chard stems (washed and chopped)
  • 3/4 cup sugar or honey
  • 1 tablespoon corn starch
  • 1 teaspoon lemon juice

Cobbler Crisp
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/2 cup oats
  • 1/2 cup brown or white sugar
  • 1/2 cup melted butter


1. Wash, slice, and combine your fruit in a medium saucepan
2. Add all the fruit mixture ingredients to the saucepan and warm on low heat until the cornstarch has dissolved (about 5 minutes)

3. Pour your fruit mixture into an olive oil coated glass casserole dish
4. Mix the ingredients for the cobbler crisp with a fork until fully blended

5. Layer the cobbler crisp on top of your fruit mixture

6. Bake at 375 degrees for 40 minutes
7. Let cool for 15 minutes
8. Serve warm with vanilla frozen yogurt! ENJOY!
