Greens and Cheese Cornbread Muffins

This is a strange (but delicious) recipe. Toddler Approved!


Ingredients:
  • 1 cup processed arugula, spinach, kale, collards etc. (about 2 cups before processing)
  • 1 cup ground corn meal
  • 1 cup whole wheat flour
  • 1/4 cup honey
  • 2 teaspoons aluminum free baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons olive oil
  • 1 cup milk
  • 1/2 cup grated cheddar cheese
  • 1/4 cup feta cheese (optional)


Directions:

1. Wash and process your greens in a food processor
2. Combine processed arugula with all ingredients


3. Mix softly into a batter
4. Fill greased muffin tin or muffin stone about halfway with batter
5. Bake for 20 minutes at 375 degrees (makes 12 muffins)
