Olive Oil and Flaxseed Zucchini Muffins

Do you know the muffin man? Our two year old does, and he loves muffins! Here is the latest muffin recipe from the Greer house.




Ingredients:
  • 2 tablespoons ground flaxseed
  • 2 tablespoons water

  • 2 cups flour
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp baking soda
  • 2 tsp baking powder (aluminum free)
  • 1/2 tsp salt

  • 1 cup olive oil
  • 1 1/2 cups grated fresh zucchini (about 3 medium sized)
  • 2 tsp pure vanilla
  • 2 eggs beaten
  • 1/2 cup organic brown sugar
  • 1/2 cup 100% pure maple syrup


Directions:

1. Mix flaxseed and water and set side to soften


2. Using a grater, shred zucchini


3. Mix dry ingredients
4. Mix wet ingredients and flaxseed


4. Combine all ingredients and mix for about two minutes until very well blended
5. Fill olive oil greased muffin tin


6. Bake at 350 degrees for 20 minutes



7. Enjoy!
