Jicama Bean Salad

I love jicama! It is such a refreshing root vegetable, and makes an excellent base for a dinner bean salad.


Jicama Bean Salad

Ingredients:

  • 1 large jicama
  • 1 red or yellow bell pepper
  • 1 cup of black beans
  • 1 cup of white beans
  • 1 avocado
  • olive oil
  • vinegar (balsamic, apple cider, or white)
  • 2 tablespoons citrus juice (lemon, lime, or orange)
  • salt
  • pepper
  • chili powder


Directions:

1. Wash and peel your jicama, then chop into cubes
2. Wash and chop your bell pepper
3. Combine bell pepper and jicama


4. Wash, rinse, strain, and cook your beans according to package
5. Combine jicama, pepper, and beans


6. Drizzle your salad with oil and vinegar, and mix well with the citrus juice
7. Salt, pepper, and sprinkle chili powder to taste
8. Garnish with sliced avocado


9. Serve with whole grain quesadilla slices for a well balanced and delicious dinner!
