Applesauce and Carrot Muffins

Our little guy loves muffins -- so we are constantly trying to come up with new and healthy concoctions. This recipe has no oil or processed sugar added, and the muffins are delicious!




Ingredients:

  • 1 cup whole wheat flour
  • 2 cups grated carrots
  • 1/3 cup honey
  • 1 cup unsweetened apple sauce
  • 2 eggs beaten
  • 1 cup oats
  • 1/4 cup raisins
  • 1 tsp pure vanilla
  • 1 1/2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 tsp aluminum free baking powder
  • 1/2 tsp salt

Directions:

1. Wash and grate carrots


2. Add all other ingredients into a large bowl and stir rapidly for about 2 minutes


3. Softly fold the grated carrots into the mix and gently stir the batter
4. Pour into a greased muffin tin
5. Bake for 25 minutes at 350 degrees
6. Enjoy!
