Rosemary Lemon Chicken with Summer Squash

This is an easy and delicious dinner!

  • 1-2 lbs summer squash or zucchini
  • 1-2 lemons
  • 6-7 boneless skinless chicken tenderloins
  • 2-3 sprigs of fresh rosemary
  • 1/4 cup shredded cheese
  • olive oil
  • oregano
  • garlic powder
  • salt
  • pepper


1. Cut squash and layer in bottom of roasting dish
2. Sprinkle with salt and pepper

3. Top squash with shredded cheddar
4. Arrange tenderloins over the squash
5. Coat the chicken with the juice of one lemon

6. Drizzle a layer of olive oil over the lemon juice
7. Sprinkle the chicken with salt, pepper, garlic powder, oregano, and one chopped sprig of rosemary
8. Layer remaining rosemary sprigs and a few lemon slices on top of your dish

9. Bake for 35 minutes at 425 degrees (or until chicken is fully cooked)
