Mojo Chicken and Baked Yuca Fries

This is a great meal to give your family a taste of the Caribbean!

Mojo Chicken

Mojo Marinade Ingredients:
[This marinade will work for 2-4 plump chicken breasts or 6-10 tenderloins]

  • Juice of 2 oranges
  • Juice of 2 limes
  • 2 minced garlic cloves
  • 1 cup olive oil
  • 1 cup white or rice vinegar
  • Spices: salt, pepper, paprika, oregano, garlic powder, fresh cilantro (optional)

1. Juice your citrus and strain to combine with minced garlic

2. Combine the mixture with the oil and vinegar
3. Add your spices (about 1 or 2 teaspoons of each spice)

4. Marinate the chicken overnight or for a minimum of five hours
5. Transfer marinated chicken to a roasting pan (allow about 1/2 cup of marinade to transfer to the dish)
6. Bake at 450 degrees for about 20 minutes (or until done)

Baked Yuca Fries

  • 3-4 yuca roots
  • Olive oil
  • Salt
  • Chili Powder
  • Garlic Powder
  • Pepper


1. Peel and cut your yuca root into fries (when you cut into your yuca it should be bright white -- brown streaks/spots mean it has gone bad)

2. Put the yuca fries into a pot and bring to a boil (boil for seven minutes)
3. Drain and wash the fries immediately in ice cold water (to prevent them from continuing to cook)
4. In a large bowl coat the fries in olive oil and spices, then lightly toss
5. Line onto a baking sheet

6. Bake for 10 minutes at 450 degrees
7. Flip fries on baking sheet and bake for another 10 minutes
8. Lightly salt the fries and serve hot

Bonus Mojo Aioli Dipping Sauce for Yuca Fries
*Use the mojo marinade and combine it with mayonnaise (use equal parts)
