Fish and Chippie Peas

This meal is a fun (and healthy) twist on the classic British dish: Fish and Chips with Mushy Peas.


Fish and Chippie Peas

Crispy Baked Fish

Ingredients:

  • 4-5 White fish fillets
  • 1-2 cups brown rice flour
  • 1-2 cups panko bread crumbs
  • 2 eggs
  • 1/2 cup grated parmesan
  • 1-2 tsp salt
  • 1-2 tsp ginger spice
  • 1-2 tsp paprika
Directions:

1. Set up three plates for breading the fish filets
2. Plate one: flour, salt, and ginger
3. Plate two: eggs
4. Plate three: panko, parmesan, paprika



5. Fully coat fish in plates one, then two, then three
6. Place fish on olive oil coated roasting dish
7. Bake for 20 minutes at 450 degrees (or until golden brown)

Chippie Peas

Ingredients:

  • 5-6 red potatoes (cut into small cubes)
  • 1 tablespoon olive oil
  • 2 cups frozen peas
  • 1/2 chopped onion
  • 1-2 tsp salt
  • 1-2 tsp pepper
  • 1-2 tsp mustard spice
  • 1-2 tsp paprika

Directions:

1. Coat pan with olive oil on stove top at medium heat


2. Add and stir-cook cubed potatoes for about 5 minutes stirring constantly
3. Add onion and continue cooking for 5 minutes
4. Add all spices and stir for about 2 more minutes
5. Add peas and continue cooking until done


6. Remove from heat and cover let sit covered for about 5-10 minutes
7. Plate and serve with fresh lemon
8. Enjoy!
