Quick Pasta Troppo Figo

This is a recipe I tried to recreate for my husband. It is from a little Italian place in our city. It has now evolved into a very simple and easy pasta dish, that we both love!

Pasta Troppo Figo (Too Cool Pasta!)

  • 1 box whole grain penne
  • 3 cups of your favorite rosa sauce (make your own here or here)
  • 1 tomato
  • 10 grape tomatoes
  • 1/2 large onion
  • 1 tablespoon of olive oil
  • About 10oz of Italian Sausage

1. Boil water for your penne (cook according to the package)
2. Chop your onion, tomato, and sausage
3. Slice grape tomatoes into halves

4. Heat [med/high] your onion in a large sauce pan with the olive oil for three minutes
5. Add your sausage to the pan (heat while stirring for three minutes)

6. Turn heat to medium and add half of your chopped tomatoes (both types)
7. Continue cooking for three minutes
8. Add the last of your tomatoes and cook for three more minutes

9. Toss your penne in parma rosa sauce

10. Top with your sausage mixture
