Easy Spinach Lasagna Rolls

This is an easy (and delicious) way to incorporate fresh spinach into a meal for the whole family!

Spinach Lasagna Rolls


  • 1 lb ground beef
  • 1/2 chopped onion
  • 1 package of lasagna noodles
  • 1 jar of spaghetti sauce
  • 2 cups of fresh spinach
  • 10 oz skim ricotta cheese
  • 2 eggs
  • 1 1/2 cup shredded mozzarella
  • 1/2 cup of parmesan cheese
  • salt and pepper


1. Preheat oven to 375 degrees
2. Cook lasagna noodles according to package (I like to coat my fingers with olive oil while working with them, because they can get sticky)
3. Brown ground beef with chopped onion

4. Stir in spaghetti sauce (cover and remove from heat)
5. In a large mixing bowl combine: ricotta, mozzarella, eggs, and spinach 

6. Mix together and sprinkle with salt and pepper
7. Lay your noodles flat and fill with spinach mixture and meat mixture (1 or 2 tablespoons of each)

8. Roll lasagna and arrange in large casserole dish (coated with cooking spray or olive oil)

9. Cover rolls with the remaining meat/sauce mixture and sprinkle with parmesan
10. Bake for 30 minutes
