Easy Mango Pineapple Chicken

Our kiddo loves fruit! As most mommies know, it can be difficult to get your kiddos to eat meat. Our little guy tends to eat more meat if I cook with fruit, so I have been experimenting with different recipes. This one was a big hit: Mango Pineapple Chicken


Ingredients:
2-3 chicken breast or tenderloins
1 mango
1 fresh pineapple or large can of pineapple chunks
1 cup pineapple juice
1/2 cup all natural teriyaki sauce

1. Preheat your oven to 375 degrees
2. Peel and cut your mango and pineapple into large chunks


3. Layer baking dish with chicken and then cover with pineapple juice
4. Layer pineapple and mango over chicken
5. Generously drizzle with teriyaki sauce (I love to use Soy Vay)


6. Bake for 45 minutes
7. If you would like to get creative and add extra toppings -- remove dish after 35 minutes add your toppings and bake for an additional 15 minutes


Here are some of my favorite toppings:
  • mild banana peppers
  • cheddar cheese
  • fresh cilantro
  • diced tomatoes
  • crushed Ritz crackers

8. Serve with rice and vegetables...
